Berbere Blend is an Ethiopian spice blend typically made of dried cumin, cloves, cardamom, black pepper, fenugreek, coriander, chilies, ginger, allspice, turmeric, salt, cinnamon, and paprika. 

  • 2 large sweet potatoes, scrubbed, peeled, & cut into fries
  • 2 tbsp light olive oil, high-oleic sunflower or safflower oil, or grape seed oil
  • 1 to 2 tsp Berbere Blend
  • Unrefined salt, as desired

Preheat oven to 400º F. Spray baking sheet with nonstick cooking spray. Place potatoes in plastic bag, add oil, toss to coat potato pieces, add spice blend and toss again until potatoes are evenly coated. Arrange potatoes on the baking sheet, leaving some space between each piece. Bake for 15 minutes, remove from oven and turn them over with tongs. Bake for 10 to 15 minutes longer, or until potatoes are well browned without becoming burned.
